Jalapeno Kale Slaw

This is the perfect side dish for your summer barbecues. Everyone will love this fresh and crunchy specialty. Great as a topping on fish tacos or burgers or as a side dish anytime.

Prepare in advance and refrigerate at least for 2 hours before serving .

In a large bowl soak the cabbage and the kale in water for at least 1 hour.

 

½ head cabbage-shredded

½ bag pre prepared kale-shredded

small orange bell pepper-cored and chopped

1 jalapeno-chopped

½ cup mayo

¼  cup sour cream

¼ cup milk or half and half

½  teaspoon sea salt

½ teaspoon pepper

 

In a large bowl add mayo, sour cream, half and half , salt, pepper.

Add jalapeno and bell pepper and mix.

Mixture should be liquidy and loose so use enough half and half to achieve this step.

Taste for proper seasoning you may decide to add a little more salt or pepper or a little more sour cream or mayo.season to your liking.

 

Drain slaw into a colander shaking off any excess water.

Add slaw to the mayo mixture.

Toss well and place in frig for at least 2 hours. Toss slaw every 30 minutes.

Season to taste and serve.


Pasta Salad

A classic with a twist- The fresh lemony taste makes all the difference.

½ lb Pasta Shells- cooked, drained and rinsed until cool with cold water

½ cup-Mayo

½ cup-Sour Cream

1 tablespoon- Truffle Oil

2 stalks-Celery-chopped

1 small Tomato-peeled, seeded and chopped

Juice of ¼ Lemon

1 Lemon –zest

Sea Salt

Fresh Cracked Black Pepper

In a large bowl combine mayo, sour cream, and truffle oil – whisk well.

Stir in celery, tomato, and lemon juice, salt, and pepper.

Add Pasta and toss. Add lemon zest to taste.

Refrigerate until ready to serve.


Steak Sandwich

This sandwich has gone down as my personal best. It has impressed one man in my family to another. First, my husband, then my father, and onto my nephews, one at a time. They heard about it, asked for it and the rest is history.

Rib Eye

1 Clove Garlic

Blue Cheese Dressing-recipe follows

Sea Salt

Fresh Cracked Black Pepper

Baguette

Romaine Lettuce

Rub Rib Eye with olive oil .Slice clove of garlic in half and rub onto steak.

Sprinkle with salt and pepper just before placing on the grill.

BBQ steak to your desired wellness . I like my steaks done “medium”, so I BBQ them 5 minutes on each side using a medium high heat.

Rest steak for 10 minutes.

Slice Baguette

Slather blue cheese dressing onto both insides of baguette.

Line with lettuce

Slice Steak

Lay slices of meat onto dressing

Drizzle dressing onto top

Sprinkle with sea salt and fresh black pepper

Blue Cheese Dressing

 

3/4 cup crumbled blue cheese

1   3 oz. package cream cheese

1/2 cup mayonnaise

1/3 cup half and half

1/2 teaspoon worcestershire sauce

1/2 teaspoon black pepper

Reserve 1/3 cup of blue cheese.

Beat together remaining blue cheese and cream cheese until smooth.

Add mayonnaise, half and half, worcestershire and pepper,blend.

Add reserved blue cheese. Chill and its ready to serve.
