Pork Roast wrapped with Bacon and Rosemary

Note:

I normally show photos of cooked food but seeing the uncooked roast gives you a clear picture of how to wrap the bacon around the roast.

4 pound pork loin

1 pound of bacon or pancetta

olive oil

sea salt

Black Pepper

garlic powder

2 large sprigs of Rosemary – 6-7” long

Kitchen string

In a large roasting pan pour 1 tablespoon olive oil. Rub around the bottom of pan to create a non stick surface.

Lay 3 pieces of string 3 “ apart vertically  on top of the olive oil.

Lay 10 slices bacon overlapping on top of olive oil

Rub Roast front and back with olive oil garlic powder salt and pepper.

Set roast on top of bacon-fat side up

Wrap each piece of bacon around roast until roast is covered in a blanket of bacon

Tie strings in taught knots around roast

Tie another piece of string horizontally around roast if needed

Tuck Rosemary into string

Bake at 190c / 375f  for 15 minutes a pound. For this roast about 1 hour.

Remove from oven and let rest 15 minutes before slicing

Serve with Roasted Rosemary Balsamic Potatoes and a big Green Salad
