Swiss Chard Saute

An Earthy delight straight from the heavens. Cook it low and slow for a long time.

Avocado oil or olive oil

2 Shallots-sliced

1 bunch Swiss Chard -chopped

2 twigs Thyme

2 Bell Peppers-sliced

5 Cremini Mushrooms- sliced

Handful of Toasted Almonds

Heat 3 tablespoons plus a little more oil in pan. Throw in shallots and sauté for about 3 minutes. Add bell peppers, thyme, salt and pepper. Cook for 15 minutes. Add mushrooms and cook low and slow until all veggies are soft and melded together about 20-30 minutes. Add swiss chard and sauté until wilted.

Salt and pepper to taste.

Sprinkle with toasted almonds and serve.

Goes great alongside chicken or fish and so amazingly good on crunchy bread.

Feel free to drizzle a little olive oil or balsamic vinegar before serving.
