Moms Red Chile Enchiladas

I’m back at Sues house and mom refuses to give up her red chile powder when making her chile sauce. This recipe is a little easier and I must admit just as tasty than my fresh roasted alternative that I previously posted. Everybody is a chef in New Mexico… respect.

Sues mom is golden in the kitchen. Her red chile is the bomb !

Moms Red Chile

In a medium saucepan:

1/3 cup Red Chile Powder- available in your spice aisle.

½ cup plus a little flour

splash of  cooking oil

4 -5 cups  water

¾ teaspoon salt

½ teaspoon pepper

1 tablespoon garlic powder

1 small onion chopped

Heat oil

Add flour cook until light brown.

Add chile powder, salt, garlic powder, salt and stir.

Add water a little at a time and cook until you get a nice thick chile sauce.Salt to taste.

In a large pan :

Brown

1 lb Ground beef

drain fat from pan once all cooked.

stir in :

2 teaspoons garlic powder

pinch salt

a few twists of pepper

1 teaspoon chile powder

 

you’ll need :

1 package corn tortillas.

 

In a large casserole dish”

Ladle chile to cover bottom of pan

Top with:

A layer ground beef

Layer of corn tortillas

Layer of chile

sprinkle of onions

Layer of cheese

Layer of ground beef

Layer of Corn tortillas

Layer of chile

Sprinkle of onions

Layer of cheese

Mix a ladle of chile into the remaining ground beef and mix.

Pour over the top of the casserole and top with cheese.

Bake for 30 minutes at 350f/180c.

Remove from oven and let sit for 20 minutes before cutting .

Serve with a dollop of sour cream or guacamole on the side.

Top with diced tomatoes and chopped cilantro.
