Priors Court Peanut Butter Cookies

Down home with a healthy twist… breakfast of champions !

 Preheat oven 180c/350f

  • 1  cup flour
  • ½  teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½  teaspoon sea salt
  • 1/2 cup  butter
  • ½ cup peanut butter
  • 1/3 cup brown sugar
  • ½ cup sugar
  • 1 teaspoon vanilla
  • 1 egg-beaten
  • 3/4 cup oats
  • zest of one orange (secret ingredient!)
  • sugar and sea salt  to sprinkle

Sift flour, baking powder , baking soda, and salt. Set aside.

Using an electric mixer or kitchen aid cream together butter, peanut butter and sugars. Add vanilla, and egg, blend well.

Add flour mixture and mix well, Stir in oats and orange rind.

I make these cookies giant size so your baking time may vary depending on the size you choose to make..

Drop 2 tablespoons of dough for each cookie onto a cookie sheet.

Use fork to do the criss-cross decoration (traditional peanut butter cookie decoration.) Dip fork in flour to avoid it sticking to cookie. Sprinkle tops lightly with a mixture of sea salt and sugar.

Bake for 12 -15 minutes.

Cool and enjoy !
