Pineapple Down Under Cake

This old fashioned cake delivers a velvety rich decadence. Its a cake that can go from everyday to any special occasion.

Preheat oven to 180c/350f

cake pan

  • 1/2 stick butter – melted
  • 1/2 cup brown sugar
  • 1/2 teaspoon Sea Salt  (secret ingredient!!)
  • 1 sliced fresh pineapple –(canned ok if off season)
  • 1 1/2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/4 cup butter
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 1 egg

Melt butter and pour into an in 8” cake pan. Sprinkle with brown sugar and sprinkle some sea salt over nice and evenly. Arrange pineapple over sugar mixture. In a bowl, add flour, sugar, baking powder and a pinch more sea salt; mix well. Add butter, milk and vanilla. Beat for 2 minutes. Add egg. Beat for 2 more minutes. Pour mixture over pineapple.

Bake 40 – 50 minutes. Remove from oven and turn upside down immediately on serving plate.

Cool to room temp and serve.
